代谢组学作为功能基因组学和系统生物学研究领域中不可或缺的重要组成部分,近年来在微生物研究领域受到广泛关注,并取得了重要进展。目前乳酸菌代谢组学正日益成为研究的热点,本研究概述了代谢组学在乳酸菌分类及鉴定、发酵工程、评价发酵食品、评价益生菌效果等方面的研究现状及进展。对乳酸菌代谢组学研究中潜在的问题和未来发展趋势进行讨论。
Abstract:
In recent years, as an indispensable part of functional genomics and system biology, Metabolomics has received extensive attention in the field of microbial research and has made great progresses. At present, metabolomics of lactic acid bacteria is becoming a hot spot in food engineering research. This paper summarized the research status and progress of metabolomics in classification and identification of lactic acid bacteria, fermentation engineering, evaluation of fermented food and evaluation of probiotics. Discussions of the potential problems and future trends in the study of metabolomics of lactic acid bacteria were also presented in this study.
